Butter’s BBQ ranks among the top 50 smokehouses in Texas according to Texas Monthly. The price hike has led Soto to consider charging as much as $51 per pound to maintain brisket on the menu. With brisket consumption accounting for 70 percent of Butter’s BBQ’s grocery expenses, these shifts have become increasingly critical. Soto’s situation reflects broader challenges faced by restaurateurs due to fluctuating food costs.
