Cuban Chef’s Restaurant in Florida Gains Michelin Star

A chef who left communist Cuba is now making culinary waves in South Florida. Four months after its opening in West Palm Beach, Emelina has become the first Cuban restaurant in the world to earn a Michelin star. Chef and co-owner Osmel Gonzalez sees this recognition as a chance to showcase Cuban cuisine’s potential when creativity meets freedom from scarcity.

Gonzalez, 36, expressed his joy and excitement upon receiving the Michelin star. Named after Gonzalez’s grandmother, Emelina introduces a modern spin on traditional Cuban flavors while respecting cultural roots. According to the Michelin Guide, the restaurant’s dishes, such as poached local oysters with yucca foam and mushroom powder, exemplify sophistication. Meanwhile, dishes like cherry tomatoes with Cuban oregano chimichurri highlight the potential in simple ingredients.

“We really love our traditions and our classic food,” said Gonzalez. “We’re just here to dream a little and take that Cuban food we love on this journey of creativity.”

Gonzalez draws from personal experiences, having spent 22 years in Cuba where communist rule limited culinary progress. “Surviving is surviving,” he noted, explaining that when survival is the focus, creativity falters. Cuban chefs have traditionally prioritized acquiring basic food over culinary innovation.

At Emelina, Gonzalez embraces opportunities unavailable in Cuba. Featuring beef prominently, the menu reflects choices once inaccessible to many Cubans. The atmosphere seeks to evoke memories of Cuba before the revolution, drawing on the nostalgia of Gonzalez’s grandmother’s era. Guests often feel transported as soon as they walk through the doors.

With West Palm Beach’s dining scene booming, Gonzalez sees Emelina’s success as a starting point. He envisions more chefs joining the area and adding to its culinary landscape in the years to come. Receiving a Michelin star fulfills a dream, but Gonzalez acknowledges that maintaining it is where the real effort lies.
