DiCosmo’s Italian Ice Plans Nationwide Expansion Through Franchises

DiCosmo’s Italian Ice, which began in 1915 as a small neighborhood shop in Elizabeth, New Jersey, plans to expand nationwide by offering franchise opportunities.

“It was one of those, ‘If you know, you know. It’s that little green shack,'” says Eileen O’Connor, the owner of DiCosmo’s Italian Ice. Having become a community institution in Metuchen, New Jersey, DiCosmo’s aims to collaborate with like-minded businesspeople to set up Italian ice shops in other regions. They are primarily targeting franchises along the Eastern Seaboard and warm-weather states, where shops can remain open for longer durations.

“My great-grandparents emigrated from Italy and settled in New Jersey,” O’Connor shared. “The story goes that it was a particularly hot summer, and my grandmother was yearning for a dessert similar to granita, a treat she had experienced in Italy.”

Granita is a popular icy dessert from Sicily, known for its refreshing texture created from water, sugar, and flavorings like lemon, coffee, or almond. In Sicily, it’s often paired with a sweet brioche bun for breakfast. DiCosmo’s Italian Ice started at a corner store in Elizabeth, where O’Connor’s great-grandmother recreated granita using locally available fruits, predominantly lemon.

The original recipe, consisting of hand-squeezed lemons mixed with fruit, water, and sugar, remains unchanged across four generations. “I can’t mess with an 111-year-old lemon-ice recipe,” O’Connor said, highlighting its popularity and heritage. Over generations, customers have appreciated the shop’s commitment to using fresh, simple ingredients.

According to O’Connor, the authenticity and quality of DiCosmo’s Italian Ice have contributed to its lasting success. Each batch is carefully made, with lemons squeezed by hand, resulting in bursts of natural fruit flavor that aren’t overly sweet. Instead of relying on stabilizers or emulsifiers, the ice is crafted fresh daily for optimal flavor and smooth consistency. This method supports DiCosmo’s choice to seek franchisees rather than retail freezer aisles.

DiCosmo’s opened as an exclusive Italian ice shop with the addition of a churning machine over the years. “If I stop doing this — and I love what I make — DiCosmo’s stops,” O’Connor recalls thinking one weekend before assuming control of the family business.

With its inviting atmosphere, DiCosmo’s Italian Ice offers a true summer experience. “It’s nostalgic. It tastes like something you might have had in your childhood,” O’Connor shared, noting the joy she feels creating a delightful treat enjoyed by many.

The shop’s warm environment encourages community gatherings, attracting families for a refreshing experience. O’Connor expresses pride in her hard-working team, which has contributed to the shop’s success. Offering franchise options has generated interest, as several inquiries have been received recently.

“I’m so glad I was born into this family where I can do this,” O’Connor reflects on the shop’s impact and her involvement in its journey.
