Health guidelines have traditionally steered consumers towards fat-free and low-fat dairy products, warning of the potential risks of saturated fat found in whole milk, cheese, and yogurt. However, a new study suggests these warnings might need reassessment. Conducted by Professor Harvey Anderson from the University of Toronto, and published in The Journal of Nutrition, the research found that adults consuming full-fat dairy daily for 12 weeks experienced no adverse effects on weight, body fat, or cholesterol. Instead, they gained some health benefits.
The study observed 74 adults classified as “overweight” or “obese.” Participants were divided into three groups: one followed a low-dairy, calorie-restricted diet, another adhered to an energy-neutral diet including three servings of dairy daily, and the third followed an unrestricted diet with equal dairy portions. Guided by Canada’s food guide, those in dairy groups received full-fat dairy products for the study duration.
Findings showed those having three servings of full-fat dairy per day did not see significant changes in weight, body fat, cholesterol, or insulin resistance compared to those with low dairy intake. These participants also reported improved blood pressure and higher intakes of calcium, protein, and vitamin D.
“With dairy products, it’s got two proteins—casein and whey—that are bound together with fat and with nutrients mixed in,” Anderson explained. This structure allows a slow and steady nutrient delivery, extending health benefits beyond isolated nutrients.
In response to the findings, Jessica Corwin, a registered dietitian, highlighted their importance in rethinking dietary advice. She mentioned that while the study doesn’t declare full-fat dairy as healthier than low-fat options, it questions assumptions about weight gain and heart health associated with full-fat dairy.
Corwin also commented on broader lessons in nutrition science, emphasizing the complexity of understanding whole foods over isolated nutrients. She stated, “Dairy contains saturated fat but is also a source of high-quality protein, calcium, potassium, and other nutrients within a complex food matrix.” Thus, the study supports the “dairy matrix hypothesis,” underscoring the interaction of food components rather than focusing on individual nutrients.
Dietary guidelines in Canada and other countries have traditionally favored low-fat dairy due to links between saturated fat and cardiovascular risk. However, these new results suggest a shift may be necessary, reflecting the idea that the physical structure of food plays a crucial role in how its nutrients are absorbed and utilized.
